Mishmash muffins (AKA What is a substitute for _______?)

File this one under “we lack all (most of?) the necessary ingredients, but I still want to make this recipe.”  We’ve had a few ears of corn languishing in the fridge for a couple weeks and Roommate decided she was going to make corn bread muffins out of them. A recipe from Deb (of course). Solution for our abundance of corn? Awesome. Still too much corn? Double it!

Until R realizes we do not have buttermilk. And only two eggs. Oy.

So, for those of you unaware (like R and me!)…

our substitutions:

One egg = 3 Tablespoons mayonnaise

1 C Buttermilk = 1 Tablespoon vinegar + almost one cup milk (let stand 5 minutes)

 

and some others we’ve found handy as well:

One egg = 1 Tablespoon cornstarch + 3 Tablespoons water

1 C creme frache = 1 C sour cream

1 packet yeast = 1 12 oz. beer (I’ve used this one to make Beer Pizza! Really!)

 

Our weirdly-lit kitchen in nighttime does not lend itself to photos.  So no pretty pictures to speak of.  They were delicious though. Seriously, go to your local farmstand for corn, and make some!
